You have probably bought a non-stick pan before that looked great on the shelf and was rubbish within six months. This tawa has a marble effect coating that is reinforced properly, not just sprayed on thin. The aluminium underneath heats up quickly and the heat spreads out flat across the whole pan rather than concentrating in one spot. That matters when you are cooking roti because the whole bread needs to cook at the same rate. One hot patch in the middle means burnt centre and pale edges every time. This pan does not do that.
The shape is slightly concave which sounds like a small detail but it makes a proper difference day to day. Batter sits where you put it. Roti stays centred. Nothing slides off to one side or pools at the edges while you are still trying to spread it. The stay-cool handle is long and comfortable so you can press down, tip the pan and move things around without grabbing a cloth every time.
Two sizes available and both are made exactly the same way. The 26cm is the right size for daily cooking — roti, eggs, crepes, one or two portions. The 30cm gives you more room when you are cooking for more people or working with larger flatbreads that need the extra surface area. Same coating, same build, just different diameters.
Gas, electric and ceramic hobs all work fine. Does not work on induction.
