Most people have had that one pan that ruined a perfectly good meal. Too thick and heavy so nothing ever gets hot enough properly. 24cm carbon steel, deep sided, and it gets hot quickly the way a wok needs to. Not the slow creeping heat you get from a heavy pan — proper fast heat that actually cooks food rather than slowly warming it through. Vegetables get colour on them. Meat browns instead of going grey. Noodles fry instead of steam. That is the difference between a wok that works and one that does not.
The sides are tall and curved so when you toss the food around it stays in the pan. Everything picks up heat on the way up the sides as well as on the bottom, which is exactly how stir fry is supposed to cook. You cannot get that in a flat pan no matter how hard you try.
